You can rinse them and separate them, as wide Thai rice noodles end up sticking together. Place a pinch of salt on a pot of water and then boil the noodles. 35 to 45 minutes will be enough, but you must ensure that you do not overcook them.

While you are cooking the noodles, you can proceed with making the sauce. You will mix all of the Drunken Noodles sauce ingredients in a pan, making sure you do a thorough job of it as it will add the most flavors to the dish. When you are done, you can wait for the noodles to cook. Once they are finished, you can proceed.
Heat up a wok or a pan in high heat with 2 tablespoons of cooking oil. Add the garlic, as well as the onions and shallots, and then cook the chicken or the pork until they turn pink. Put in the chili peppers, and then reduce the heat to medium. Put them aside to cook the egg.
